What You’ll Need
- Paper cupcake liners
- 4 bananas
- 2 cups whole-wheat flour
- 1 teaspoon baking soda
- ½ cup shortening
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon salt
- ½ cup low-fat sour cream
What to Do
- Preheat the oven to 350ºF.
- Line a muffin tin with 12 to 16 paper liners.
- Cut the bananas into pieces and mash with a fork or potato masher.
- In a bowl, mix whole-wheat flour with baking soda.
- In another bowl, mix shortening and sugar, and beat until creamy. Add the eggs, the mashed bananas, vanilla, and salt. Mix until just blended.
- Add the flour mixture and the sour cream. Mix gently until combined.
- Fill the muffin cups half full. Bake for 15 to 18 minutes and let cool (if you can wait!).
