These banana-bread muffins will disappear so quickly you’ll think a band of monkeys raided your kitchen! Let the kids smoosh the bananas, measure, and stir. You help by popping the muffins in and out of the oven. Vary the recipe by stirring some raisins or nuts into the batter. Decorate the top of each baked muffin with a fresh berry. Making the muffins for a party or for dessert? Frost them with vanilla icing and top with chocolate jimmies.

What You’ll Need
  • Paper cupcake liners
  • 4 bananas
  • 2 cups whole-wheat flour
  • 1 teaspoon baking soda
  • ½ cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • ½ cup low-fat sour cream
What to Do
  1. Preheat the oven to 350ºF.
  2. Line a muffin tin with 12 to 16 paper liners.
  3. Cut the bananas into pieces and mash with a fork or potato masher.
  4. In a bowl, mix whole-wheat flour with baking soda.
  5. In another bowl, mix shortening and sugar, and beat until creamy. Add the eggs, the mashed bananas, vanilla, and salt. Mix until just blended.
  6. Add the flour mixture and the sour cream. Mix gently until combined.
  7. Fill the muffin cups half full. Bake for 15 to 18 minutes and let cool (if you can wait!).
